Neapolitan Chia Seed Pudding (Vegan, Paleo)

This three layer Neapolitan Chia Seed Pudding is bursting with a combination of strawberry, vanilla and chocolate flavors. This Overnight Chia Seed Pudding is easy to make in advance and have on hand for your or your kids as a quick breakfast option throughout the week.

Tips for this recipe:

  • Overnight is best - You don’t have to leave these in the fridge overnight before you can eat them, but it is the best way to have them. Setting these chia seed puddings in the fridge overnight will give them time to really set before you dig in. If you don’t have all night, 4-6 hours should be enough time.

  • Layer once set - As long as your chia seed puddings have set, you can layer them whenever you want! I like to layer my chia puddings all at the same time so I don’t have to keep so many containers in my fridge, but that’s my personal preference!

  • 2-4 servings - Chia seed puddings can be very filling. This recipe will make anywhere from 2-4 servings depending on the amount you or your kids like to eat.

  • Almond milk will work too - I prefer to make my chia seed pudding dairy free using coconut milk, but I’ve also had this recipe work with unsweetened almond milk. You can try other dairy free milk options, but I can’t speak to how they will taste or set.

INGREDIENTS:

VANILLA LAYER:

½ cup coconut milk
2 Tbsp chia seeds
¼ tsp vanilla
1-2 tsp honey or maple syrup *optional

CHOCOLATE LAYER:

½ cup coconut milk
2 Tbsp chia seeds
1 Tbsp cocoa powder
1 Tbsp honey or maple syrup

STRAWBERRY LAYER:

¼ cup + 2 Tbsp coconut milk
2 Tbsp chia seeds
6 strawberries, halved
1 Tbsp honey or maple syrup

INSTRUCTIONS:

  1. In 3 separate bowls, make the individual chia seed layers by combining all ingredients for that flavor.

  2. Chill covered for at least 6 hours or overnight.

  3. Once the chia seed pudding has set, layer it for serving into separate containers. You can eat immediately or store airtight in the fridge for up to 5 days.
