Gluten Free Pumpkin Brownie Bars

The ultimate fall treat, you would never guess that these Pumpkin Brownies are gluten free and allergen friendly. They're perfectly fudgy, not too sweet and guaranteed to impress even your pickiest friends!

Tips for this recipe:

  • You can sub coconut oil or ghee for the butter - These gluten free pumpkin brownies taste best if you use butter for them, but you can substitute coconut oil or ghee if you don’t want to use butter. I have not tested these with any other oils so can’t recommend or let you know if it will work.

  • Allergen friendly chocolate chips - I like to use Enjoy Life dairy free chocolate chips, but ultimately, the gluten free pumpkin bars will turn out delicious with whichever chocolate chips you choose.

  • Use creamy almond butter with no extra ingredients - Make sure the almond butter you choose has just one ingredient - almonds. If there is salt or other oils, it will impact the flavor. You also want to make sure you go with the creamy option instead of crunchy for these fudgy pumpkin brownies.

  • These pumpkin brownies are freezer friendly - You can easily make these brownies up ahead of time or make multiple batches to keep in the freezer. I suggest thawing them overnight in the fridge or on the counter for about an hour before eating.


GLUTEN FREE PUMPKIN BROWNIE BARS

INGREDIENTS:

¾ cup pure pumpkin
2 Tbsp almond butter
¼ cup butter, melted + cooled
1 lg egg, whisked
½-¾ cup coconut sugar
¾ cup almond flour
½ cup tapioca flour
2 Tbsp pumpkin pie spice
½ cup chopped pecans
½ cup chocolate chips

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees.

  2. Lightly grease an 8x8 baking dish with coconut oil

  3. Mix together all dry ingredients, except for pecans & chocolate chips, in a large bowl.

  4. In a separate smaller bowl, combine all wet ingredients.

  5. Mix wet ingredients into dry until well combined. Then fold in the chopped pecans and chocolate chips until dispersed well throughout.

  6. Pour brownie mix into the baking dish and use a spatula to ensure it is spread evenly.

  7. Bake brownies for 35-40 minutes. Then remove them from the oven and let cool before serving.
