The crust won’t spread out - make it the exact shape and size you want before you pop it in the oven the first time because that’s how it will stay!
A thinner crust = a crispier crust - don’t make the gluten free flatbread so thin that it is non-existent, but if you prefer a crispier crust you definitely want to thin it out more! Alternatively, you can do a slightly thicker crust and bake it longer, but you’re on your own for estimating those cook times!
The batter can be sticky - Use the back of a spoon or be sure to oil your hands well when you spread this gluten free flatbread dough out.
Let. It. Rest. - seriously, don’t skip this step! When done cooking, take it out and let it rest for 5-10 minutes before you cut into it.

INGREDIENTS:
1 ¼ cup tapioca flour (+ up to ¼ cup extra)
½ cup coconut flour
4 eggs, whisked
1 cup coconut milk
1 tsp apple cider vinegar
1 tsp baking soda
½ tsp salt
½ tsp garlic powder
½ tsp oregano
Pizza sauce + toppings of choice
INSTRUCTIONS:
Preheat your oven to 350 degrees.
Cover 2 baking sheets with parchment paper.
In a large bowl, combine all ingredients and mix well. If it is still very runny, add in tapioca flour 1 Tbsp at a time, up to ¼ cup. Batter will not form a firm dough, but it should not be runny.
Using a spoon, divide the batter in half on the center of each baking sheet.
Use the back of the spoon (or oil your hands) to spread the mixture out into a flatbread shape. It should be about 7” x 11”
Place in the oven and bake for 25 minutes.
Remove the crust from the oven and top it with your choice of sauce, leaving a ½-1” rim around the edges. Add your pizza toppings and cheese.
Place the pizza back in the oven for another 13-15 minutes until the cheese is fully melted.
Remove the pizza from the oven and let it rest for 5-10 minutes. Then, use a pizza cutter to slice the pizza into 8 pieces per flatbread.
