Curry Chicken Salad

Tips for this recipe:

  • Other mayo will work - I always use paleo mayonnaise because of the clean ingredients and lack of sugar. This is the kind I recommend, but you could realistically use any mayo to make the curry aioli for this chicken salad

  • It’s better colder - This curry chicken salad will taste the best if you let it set in the fridge for a few hours after making. You don’t have to, but the flavors are even better that way!

  • So good as a sandwich - The first time I had curried chicken salad was on a sandwich from a restaurant in Colorado and I fell in love. This curry chicken salad recipe tastes so good between a bun, but is also delicious on top of lettuce or on it’s own.


CURRY CHICKEN SALAD

INGREDIENTS:

CHICKEN SALAD:

4 cups diced cooked chicken
½ green apple, diced small
½ celery stalk, diced small
3 heaping Tbsp diced red onion
4 Tbsp golden raisins

CURRY AIOLI:

⅔ cup paleo mayo
2 tsp curry powder
1 tsp spicy brown mustard
⅛ tsp garlic powder
Dash of salt
Dash of cumin
Dash of ground ginger

INSTRUCTIONS:

  1. Combine aioli ingredients together in a separate bowl.

  2. In a large bowl, add in chicken, apple, celery, onion and raisins.

  3. Mix in curry aioli until chicken salad is creamy to your liking.

  4. Keep chilled in fridge until ready to serve.
