Tips for this recipe:
You can skip soaking if needed - I highly recommend soaking the sweet potatoes as written in the recipe because with the excess starch removed, they will crisp up easier BUT if you don’t have the time or just don’t want to, you can skip that step.
Smaller patties will make more servings - This makes 4 servings using 1 lb of breakfast sausage for 4 patties. If you want to make them smaller, you can divide them into 6 patties and this recipe will still work fine.
The potatoes are best fresh - If you want to save time, you can cook up your breakfast sausage in advance, but the sweet potatoes are going to be the best consistency and texture right after cooking them in the skillet.
SWEET POTATO BREAKFAST SKILLET STACKS

INGREDIENTS:
2 Lg sweet potatoes
1 lb breakfast sausage
4 eggs
2 tsp garlic powder
Salt to taste
Crushed red pepper *optional
Coconut oil (or other) for pan frying
INSTRUCTIONS:
Peel sweet potatoes and slice them into a fry shape..
Soak the potato slices in water for 1-2 hours to remove excess potato starch. *This is an optional step, but recommended as it will help them crisp up easier.
Once done soaking, take a shallow skillet (sauté) pan and melt a layer of coconut oil over medium. It should cover the fry about ½ way up so it needs to be ~¼ inch deep.
Add the potatoes in the oil, without crowding the pan, to begin frying them. Be sure to flip the potatoes so all sides can get brown and crispy. Each side will take about a minute to cook, so keep a close eye on them to prevent burning. You will likely have to do 2-3 batches to get them all cooked.
While the potatoes are frying, form your breakfast sausage into 4 thin patties. Cook these in a separate pan, flipping halfway through once they are a nice golden brown and cooked through.
While the sausage is finishing up, or resting, cook the eggs to your liking.
Once all potatoes are done, toss them in the garlic powder. Add salt to taste.
Separate potatoes into 4 stacks. Top each stack with a breakfast patty, then add the egg. Sprinkle crushed red pepper on top (optional) and serve!
