Tips for this berry buttercream recipe:
Let the blueberry compote cool completely - if you rush and use it warm, your blueberry buttercream won’t set so be sure you give it time to fully cool.
Fresh or frozen blueberries are OK - you can use either fn this recipe for berry buttercream!
Use a stand mixer if you have it - a hand mixer will work totally fine - in fact, that’s what I used when I made this recipe - but a stand mixer will be much more convenient. If you have one, I definitely recommend using it!
Don’t try to make this dairy free - As much as I love making recipes dairy free, this specific blueberry buttercream recipe was designed and tested with dairy. If you’re sensitive to this, I suggest using another recipe since I can’t guarantee the outcome of this one if you make any substitutions for it.

BLUEBERRY BUTTERCREAM FROSTING

INGREDIENTS:
1 cup blueberries (fresh or frozen)
½ Tbsp lemon juice
2 8oz sticks unsalted grass fed butter
1 tsp vanilla
½ cup honey
4 Tbsp tapioca flour
INSTRUCTIONS:
In a small saucepan, saute blueberries and lemon juice over low heat. Stir frequently and smash as they soften using the back of a wooden spoon to help release juices.
After about 10 minutes, once the blueberries are mashed well, use a fine mesh stranger to separate the juice from remaining mashed fruit into a small bowl. You can throw out the mashed fruit remains.
Allow the blueberry compote to cool COMPLETELY. Then combine this with the rest of your ingredients.
Using a stand or hand mixer, whip until your buttercream is fluffy, which will take several minutes. Use immediately.
