PORK LOVER’S BREAKFAST CASSEROLE

INGREDIENTS:
1 lb breakfast sausage
10 oz bacon
5 oz Canadian bacon or ham, chopped
12 eggs
⅔ cup coconut milk
1 med yellow onion, diced
5 oz spinach, chopped
Salt + pepper to taste
2 Tbsp coconut oil (or bacon fat)
INSTRUCTIONS:
Preheat the oven to 425 degrees.
Lay bacon out on an aluminum foil covered baking sheet. Place in the oven and bake for 13-15 minutes until it has crisped up.
While the bacon is cooking, crumble the breakfast sausage into a pan, then saute it until the sausage is cooked through.
Whisk the eggs into a large bowl. Add in the chopped spinach and canadian bacon.
Once the breakfast sausage is fully cooked, strain out the grease and add sausage to the egg mixture.
Remove your bacon from the oven and crumble it between sheets of paper towel. Add bacon to the egg mixture.
Add your coconut oil or bacon fat into the saute pan. Cook your diced onion until softened and slightly brown/caramelized.
Add your onions, salt and pepper to the egg mixture. Stir the mixture so all ingredients are combined.
Pour into a lightly greased 9x13 casserole dish.
Place in the oven to bake for 30-35 minutes until a toothpick comes out clean. Then, remove from the oven and let rest for 5 minutes before serving.
