Gluten Free Peanut Butter Jelly Oat Bars

A toddler snack that the adults will try to steal, these gluten free peanut butter & jelly oat bars will become a staple in your house. These freezer friendly bars combine the light sweetness of jelly with the rich peanut butter taste to make an epic bar perfect for a light breakfast, a mid-afternoon snack or an after dinner treat.

Tips for this recipe:

  • You can use regular oats! - I made these peanut butter & jelly bars to be gluten free, but if you wanted to use regular oats, you can.

  • Don’t change out the almond flour - I haven’t tested these gluten free oat bars with any flour other than almond flour, so I can’t guarantee the results if you switch it out!

  • Try a fruit spread! - Most store bought jelly and jam is going to be chocked full of sugar. I like to use St. Dalfour’s fruit spread, which is sweetened with fruit pectin and a great options for bars like this. I always have a jar on hand at home!

  • These bars are freezer friendly - these store great in the freezer! pop them in the microwave for 15-20 seconds to thaw or set them out on the counter for a bit before hand


GLUTEN FREE PEANUT BUTTER JELLY OAT BARS

INGREDIENTS:

¾ cup gluten free rolled oats
½ cup almond flour
½ tsp cinnamon
½ tsp baking soda
¼ tsp salt
2 eggs
2 Tbsp coconut oil, melted but not hot
½ cup peanut butter (no sugar added)
¼ cup coconut sugar
Jelly/Jam to taste (~3-4 Tbsp)

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees.

  2. Add all ingredients, except jelly, to a mixing bowl. Stir until well blended.

  3. Pour mixture into a lightly greased 8x8 pan and spread evenly throughout. 

  4. Drop small balls of jelly/jam across the top of the mixture. Then, take a knife and gently swirl across the top.

  5. Place in the oven and bake for 25-30 minutes.

  6. Remove and let cool before slicing and removing.
