DAIRY FREE BANANA BREAD MUFFINS

INGREDIENTS:

3 overripe bananas, mashed
3 eggs
½ cup coconut oil, melted
½ cup coconut milk
2 Tbsp raw honey *optional
½ tsp lemon juice
1 cup coconut flour
½ cup almond flour
½ cup tapioca flour
1 ½ tsp baking soda
½ tsp vanilla
¼ tsp sea salt
Unsweetened shredded coconut *optional

INSTRUCTIONS:

  1. Preheat the oven to 375 degrees.

  2. Using a food processor blender, combine all wet ingredients until lump-free

  3. In a separate large bowl, combine all dry ingredients. Then gradually mix the wet and dry ingredients together.

  4. Fill muffin cups to desired height using a spoon. I like to use a cookie scoop. These will not rise significantly so you can fill almost to the top.

  5. Sprinkle shredded coconut on top of the muffins before putting them in the oven. *optional step

  6. Bake for ~25 minutes or until a toothpick comes out clean. Let the muffins cool completely before enjoying.
